The Rolled Pancetta is a pinkish white meat, tending to red in the leaner pancetta.
The processing is simple, but not trivial: the bacon undergoes a thorough degreasing before being immersed in brine and subjected to seasoning.
It is a typical salami of the Italian culinary tradition that is obtained from the abdomen of the pig which is tanned with various spices, salt and pepper. The meat is then rolled up on itself and left to mature for about three months.
