It is one of the most typical Italian cured meats.
The selected and finely minced pork is combined with diced lard, salt and ground and chilli. Then everything is stuffed into natural casing, and pressed to give it the typical flattened shape; hence the name.
It is left to mature in a ventilated environment for about four months.
It is a sliced salami to be offered as a simple appetizer, or for appetizing snacks or snacks. Excellent on pizza together with basil, crumbled oregano and black olives.
